Instructions Mash Avocados into paste ( I left one half chunky for texture) clean bell pepper of seeds and wash.

Combine tomatoes bell peppers onion and carrots into food processor and pulse until desired texture. Mix into avocado and add garlic, sea salt and pepper to taste. Add lemon juice, just a squeeze from small lemon. Slice cucumber into discs and enjoy. Store in air tight tupperware, stir before eating due to moisture.

Instructions Put greens and coconut plus coconut water into blender & process until all pieces of greens are no longer visible. Mixture will be green but no solid pieces.
Add 1 TBSP of carob or cacao powder
Add 1/4 cup of blue agave nectar
Add 1 frozen banana - cut into pieces
Add 1/2 blender of frozen strawberries cut in 1/2
PROCESS
If too thick, add water so it blends smoothly
SPRINKLE CACAO NIBS all over the top & DRINK. My 5 year old loves this every morning and as you do it, you start to add more greens, less agave, etc. It sort of moves you off the standard tastes onto the raw tastes.

Tomato Sauce Ingredients:

1/2 cup packed sun dried tomatoes, soaked 15 minutes in water
1 Tbsp apple cider vinegar
1.5 Tbsp agave
dash salt
1 small tomato

Instructions Blend all sauce ingredients in a high speed blender until smooth. Taste and add more agave, vinegar if necessary.

Optional: marinate the mushrooms in apple cider vinegar, nama shoyu, and water for 1hour+ to soften.

Slice the mushrooms lengthwise so there are two round halves that look like mini pizza crusts. Spread the sauce on each mushroom slice. Add green pepper and olives. Dehydrate for 2 hours at 145 degrees, turn down to 115 degrees for another hour or two. Alternately, dehydrate at 115 degrees for 8 hours. Serve warm out of the dehydrator.

Ingredient List Bowl #1 ~ combine ingredients below
• 8 cups nuts: almonds, pecan, cashew, pistachios (crush in plastic bag w. mallet or zap)
• 1 cup pumpkin seeds, 1 cup sunflower seeds
• 2 large handfuls of dried coconut
• 4 cups dried fruit cut small: apricots, mangoes, pineapple, mango, peach, goji berries, mulberries, banana, plum, fig, raisins
***Other stuff you can add + whatever to your liking: sesame seeds, hemp seeds, flax seeds, raisins, other dried fruits, raw cacao nibs
Large Bowl #2 ~ combine ingredients below
• 1 cup of nut butter (almond, cashew or macadamia)
• 1 cup honey
• To Taste: vanilla, cinnamon(I use about a Tablespoon of each because I love the flavors
Sea salt: I use about 2 teaspoons. This is really “to taste”

Instructions Combine ingredients from bowl #2 in food processor. Then pour over nuts, seeds and dried fruit in bowl #1. Combine thoroughly with a spatula. I just clean my hands really well and find that “clawing” it for about 5 minutes gets it all spread around. Don't worry if the whole thing doesn't stick together immediately.
Press out onto cookie sheets lined with waxed paper. Put waxed paper over and push down firmly until flattened. Put in refrigerator or freezer for a few hours. Break off to eat! This must remained chilled.

Instructions Holding the corn on it's end, with a sharp knife, slice the corn kernels off the of the cob. Be careful not to cut too closely to the base of the kernel or you will include the hard bits that get stuck in your teeth. Dice the cucumber, radish, red pepper and avocado into small pieces just a little bigger than the corn kernels themselves. Slice each cherry tomato into 6 wedges and toss together with olive oil, lime juice, salt and pepper. Enjoy

Instructions In a blender or food processor, place about half of the watermelon, cucumber, pepper, and onion and all of the jalapeño. Add olive oil and lemon juice and puree until smooth.
Combine the remaining ingredients in a large bowl and mix well. Add to pureed ingredients and stir to combine. Add more salt and pepper, to taste.

Chill for at least one hour, to allow flavors to combine, and stir well before serving.

Serve chilled and enjoy!

Instructions Place the dates small bowl and cover with the water. Allow to soak for at least 15-20 minutes. This will soften the fruit and make it easier to blend.
Remove the core from the apples, chop into several large chunks each and place in blender or food processor. Add the fruit and the water and puree until smooth, adding a bit more water if needed. Garnish with a bit of freshly ground cinnamon if desired.

Instructions soak the cashews for 2 hrs, soak the dates for 30 mins and soak the coconut for about 20 - 25 min. Drain off the water and put those 3 ingredients in the food processor -- pulse a few times to get the mixture started -- add vanilla and process until its well mixed and sort of looks like cookie dough -- scraping down as needed

put your raw cacao powder on a plate and scoop out some of the mixture into your hand forming a ball -- about an inch across ball and then roll in the cacao tapping off the excess -- you can make them any size but i find this size makes a perfect mesh of the cacao and blended mixture

I refrigerate for about an hr to let the ingredients meld -- makes between 12 and 15 depending on the size you roll

I put 4 days to last in the fridge cuz they never have lasted longer before getting eaten up -- enjoy

Instructions For the base:
In a high speed blender, process the cashews into a flour. Add remaining ingredients and process again. Press into the bottom of 9" springform tin and place in fridge whilst preparing filling.

For the filling:
Melt the cacao butter first. Slice the avocadoes and place the flesh into the blender, along with the agave, and mixed berries, and melted cacao butter. Blend into a thick cream. Remove base from the fridge and spread filling on top. Decorate with coconut flakes. Refrigerate for 2-3 hrs. Enjoy!!

Instructions In small to medium bowl add garlic and ginger and smash a bit to release juices. Add everything else, water (and oil if desired) last. Add enough water till desired consistency and enjoy.

To make into dressing add a little more water and oil as well as a couple more figs. Fresh tumeric is tasty in the dressing. You can also try using a food processor to combine ingredients but you have more control over the texture by hand. Just keep fiddling with amounts till it tastes right to you (I know I'm maddening...), I only approximated the measurements I used because I go by the "add more till you like it" mantra in my food prep. ENJOY!

Instructions I put this together in preparation for a taco themed pool party. Originally a simple tomato and avo salad, it took on a life of its own to become my solution for my taco cravings when I stuck it between two crisp romaine heart leaves!
1. In Large bowl: Halved tomatoes, corn, avocados, rosemary, onion, spices,
2. In food processor: Garlic Ginger Cilantro Basil (don't clean). Till diced. Add to large bowl and add spices. Mix a few times.
3. In food processor: 4-6 small whole cherry tomatoes, sun-dried tomatoes, 5-6 T of sun-dried tomato water, truffle oil, dash of salt and pepper if desired. Blend till smooth
4. Add dressing to bowl, drizzle with agave, and give a light squeeze of lime. Add a dash of cayenne if desired. Mix well and ENJOY!

Instructions Put all wet ingredients and spices into a blender and blend until smooth (all but last three ingredients).

Pour into a large bowl and add flax meal, almond flour, sesame seeds. Stir to combine - I like to use my hands for this.

Spread the mix on teflex-lined dehydrator trays, all the way to the edges. Make a bit thick, but not too thick - maybe cracker thickness. Dehydrate to desired crispness - generally at least several hours. Make sure to flip halfway through, removing the teflex. Once bread is done, cut into 9 squares per tray - the perfect sandwich size. Top with whatever your favourite sandwich ingredients might be: avocado, tomatoes, cucumber, sprouts, saurkraut, mustardaisse, lettuce, anything you like!

Instructions Grind the brazil nuts in a food processor until the texture becomes similar to fine bread crumbs. Then add the wild blueberries, agave nectar, cacao powder, and Celtic sea salt and process until the blueberries are semi-smooth, pausing periodically to scrape down the sides and help the mixture turn over. The blended ingredients should appear somewhat rough with bits of blueberry skin speckled throughout. Next, transfer the mixture to a large bowl and fold in the mashed banana until well incorporated. Drop double-tablespoon-sized amounts onto ParaFlexx-lined dehydrator trays and form into desired cookie shapes no thicker than one centimeter. Dehydrate at 115 degrees for at least six hours before transferring the partially-dried cookies to dehydrator mesh sheets. Flip the cookies halfway through the dehydrating process to ensure that they dry evenly. Continue dehydrating until each cookie is firm in the middle. Due to the high moisture content of this recipe, a lengthy drying time is required and may take up to a full twenty-four hours. The finished cookies should be stored in an airtight container and kept in the refrigerator. They will keep for two weeks or more, unless you gobble them up before that!

“Blueberry Turtles” can be enjoyed with your choice of nut or seed milk, however they are just as delicious when eaten by themselves. They make great on-the-go snacks and are easy to take along anywhere.

A few tips...

The listed ingredients can amount to roughly two dozen or more turtles. These cookies are not meant to be overly sweet or hard but instead sweet-tart and chewy.

Overripe bananas do not work well for this recipe as their concentrated flavor overwhelms the other ingredients. Bananas that have just become ripe and have small brown spots throughout the surface of the peel are perfect. Bananas with peels covered in large brown spots or that are completely brown are too ripe for this recipe.

The full character of this cookie is best enjoyed when the middle is completely firm. As I mentioned earlier, the high moisture content of this recipe requires a lengthy drying time. If you make the cookies thicker than one centimeter, the dehydrating process will take much longer. A full twenty-four hours works perfectly for the Hi-Rawkus kitchen, but you will need to determine what time scale is good for you.

Instructions First let's start with the marinade~
Press or finely mince your piece of garlic and mix it with your other marinade ingredients in a cup or small bowl. Set aside and allow at least 10 mins for the flavors to get acquainted.

On to the veggies!
Break your broccoli head down into very small florets and combine them with your other sliced veggies in a large glass bowl or casserole dish.

Final steps~
Pour on your yummy marinade and toss lightly to thoroughly coat the veggies. Cover the mix and allow to sit at room temp for about an hour and a half, this way the marinade can work its tenderizing magic. If you have a dehydrator you can place it in there at 105 degrees F to accelerate the softening process.

Serve at room temperature or lightly warmed from your dehydrator. For added fun you can serve this over your favorite raw rice or zucchini noodles!

Instructions To make 1 quart.......

Bring 1 quart UNchlorinated water and 2T sea salt to a boil in a non-reactive pan. Remove from heat and let cool to room temp.

While water is cooling pick thru your produce...make sure there are no bugs, bite spots or blemishes in your produce. Peel your garlic (2 cloves).

Layer Green Beans & 2-3 heads fresh dill in quart jar. Set your two peeled cloves of garlic on the top of the beans, leaving a 1" head space.

Ladle your cool salt water into the jar so that the beans, dill & garlic are all under water.

Put a lid & ring on the jar and tighten hand tight. Store in a cool place out of direct sunlight (under the kitchen sink works for me). They are edible immediately, but will ferment over 3-4 days time. Many folks refrigerate after 3-4 days...I don't....I'm storing winter food for a family of 8-10, three meals a day - lol. Rather, I store MINE on a bottom shelf at room temp until I'm ready to open the jar. Once a jar is opened THEN it goes to the fridge for 60 days.

Pour over noodles.

Slice Kalamata olives and some more basil and mix into pasta. Add sea salt and pepper.

3)sprinkle some golden linseed into the blender (the more linseed added, the thicker the yoghurt)
4) Add a helping of soaked almonds (more for a nutty flavour)
5)blend untill very smooth and you can no longer see whole linseed.
6) also taste good of you put the almonds at the very end so you have a chunky yoghurt.

Eat on its own, or pour over fruit (makes a tasty and satisfying breakfast)

Add to seed mixture in bowl.
Mix together, adding water if needed.

2/3 carrot pulp (leftover from juicing)
2/3 cup soaked flax seeds (soaked for 30 min in 1-cup water)

4.Spread mixture on to a plastic dehydrator sheet (if dough it sticky you can wet the spoon and dough with a little water or EVOO).
5.I was able to spread the dough on 3 dehydrator sheets at about ¼ to ½ of an inch deep.
6.Dehydrate at 105* for 7-8 hours and the flip and dehydrate for another 2-4 hours.
7.When done the crusts/bread should be dry, with a hint of moistness or softness.

1 cup almonds
1 cup Macadamia nuts

Instructions Crust: Process the nuts into small pieces in a food processor. Add the dates and salt, and process until well mixed. It will form a sticky ball. (If it falls apart when you squeeze it, then you’ll need more dates.) Lightly oil your glass pie plate with coconut oil. Press the mixture from the center out to the sides. It will be about ¼” thick or more. Set in the refrigerator.
Coconut Cream:
Zap ingredients in your Vitamix on low for awhile. Scrape down the sides. Then zap on medium until super creamy. If you can get it to go on high this is ideal. The tricky part here is that coconut meat can be super-young and wet, or older and drier. So, you’ll have to do two things:
1) If it is too dry and won’t blend, then add some more agave or some coconut water. You want it thick and creamy, but it also has to blend.
2) You’ll have to taste test it to be sure that it is sweet enough, salty enough, enough vanilla, etc. Part of the reason for this is whether you use vanilla powder or liquid vanilla. Or if you use Sea Salt or other salt, etc.
Filling:
Cover the crust with ~1/3 of the cream. Place ~ 1 cup of blackberries into the cream. Pour the rest of the cream over the blackberries. Place the rest of the blackberries into the cream. Refrigerate ~2 hours before serving.
Note: It works best to hand-place each blackberry into the pie. This way the blackberries stand out from the cream and give a visual beauty to the Earth’s bounty! If you pour into the cream, then the cream becomes purple and the blackberries mush up a little.

Ingredient List 150g coconut butter
100g cacao butter
150g cacao powder
100g mesquite
100g maca
50g xylitol

For the swirl:
100g coconut butter
80g lucuma
80g maca

Instructions Melt the coconut and cacao butter together. Cacao butter takes longer to melt so put that in first. In a separate bowl, measure out the cacao powder, mesquite, maca and xylitol. Mix them together, then pour in the butters and mix completely. In your heating bowl, heat the coconut butter for the swirl while you're mixing the chocolate. Then blend the butter, lucuma and maca in a bowl by hand. Pour half your chocolate into a large tray, then pour some maca butter on top and swirl it around a bit to create patterns in the chocolate. Pour more chocolate on top, then some more maca and keep going until you've used all the chocolate, but you need to keep half of the maca for the top. With the rest of the maca butter, swirl it over the top of the chocolate, creating patterns. Leave to set in the fridge for three hours. When it's set, cut into squares. Enjoy!

Recipe Name Seattle's Best Heirloom Tomato and Portabello Steak Pasta
Ingredient List 5-7 Zucchini, peeled
white truffle oil (optional)

Portabello Steak:
4 Portabello Mushroom Caps (left whole, cut in halves, or cut in strips)
Spices: Cumin, Chili Powder, Mustard Powder, Garlic Powder, Trader Joes Spice Salute or Italian Seasoning, Cayenne Pepper, Cinnamon, Fresh Ground Pepper, pinch sea salt.
Nama Shoyu or Braggs
1 clove garlic pressed or smashed
small piece ginger
Extra Virgin Olive Oil or oil of choice (I like to mix olive and flax)
Agave Nectar (3 seconds)

Sauce:
5-7 Heirloom Tomatoes
1/2 c diced green onions/red onions
Large handful basil
handful parsley
15 sundried tomatoes soaked (save water)
3-5 dates pitted and soaked (save water)
Sea Salt
Cayenne Pepper
Agave Nectar (5-7 seconds)
Medium piece Ginger
7-9 cloves Garlic (or to taste)
Fresh or dried Rosemary
1/8-1/4 c flax or olive oil

Instructions This recipe was insipred by a visit to Seattle, staying with some friends who were really interested in learning more about my raw lifestyle. They were very surprised when I told them that I don't sit around munching on carrots all day and so I decided to create a dish all on my own, no cookbooks or recipes, just based on my last year of raw experiences. And boy is it tasty! They loved it (and a couple of them were mushroom haters!)!

1. In medium to large container with a lid, combine mushrooms with other steak ingredients.
2. Add lid, shake to coat, and let marinade for at least one hour. The larger your pieces are, the longer it will need to marinade; whole pieces can take around 4 hours. You will know when the center looks like it has absorbed the juices at least 1/4 of the way in.
3. Using a Saladacco, a Vegetable Jullianer, Mandolin, or any similiar product, make zucchini into noodles and let sit at room temp. Sprinkle with salt, pepper, and TJ/ italian seasonings and mix. (Optional add 1t white truffle oil).
4. Dice 1 large heirloom tomato and set aside. Also set aside 1/2 of the onions, and 4 basil leaves
5. Combine all the sauce ingredients into food processor and blend well. Add saved sun-dried tomato and date water and blend until desired consistency.
To Assemble:
6. In large serving platter add Zucchini Pasta, sprinkle with rest of onions and basil leaves. Add 1/2 of diced heirloom tomatoes to center of pasta. Add mushrooms to the center on top of tomatoes. Sprinkle remaining heirlooms over everything. Drizzle with tomato sauce and sprinkle with fresh ground pepper. Serve with remaining tomato sauce on the side (I put mine in a small pitcher) to add to individual plates, and ENJOY!!!!

Pesto Sauce of Choice

Instructions This is a GREAT way to use leftover sauces!!! Little bites of savory indulgence!

1. Place Mushrooms in container with lid and add oil. Add lid and shake to coat (can drizzle with olive at the end instead if preferred).
2. Fill Mushrooms with pesto on the bottom, marinara on top. Place 2-4 slices of garlic around the inner sides of the mushrooms.
3. Sprinkle with Spices you like, top with powdered pine nuts if you like for a parmasean look if desired.
4. Place Mushrooms on dehydrator screen and dehydrate 2-4+ hours until mushrooms are soft. If you don't have a dehydrator then let sit in fridge until mushrooms soften and then let sit at room temperature to warm before serving.

Recipe Name Beet Pasta with Alfredo Sauce
Ingredient List BEET PASTA
2 pounds of beets, made into pasta

ALFREDO SAUCE
1/2 cup water
1 cup raw cashews
1/3 cup pine nuts
2 cloves garlic
1 teaspoon salt
1/4 cup, or less, lemon juice
1/4 teaspoon nutmeg
1/16 teaspoon cayenne pepper, ground

GARNISH
1/3 cup finely chopped parsley

Instructions Using either a spiral slicer or a veggie peeler, create pasta with the beets. Sprinkle the pasta with some salt and massage it into the beets. Let the pasta sit in a colander while you create the sauce. It will become softer, like an al dente pasta.

In a food processor, mix together all sauce ingredients. Place pasta onto individual serving plates, top with sauce and parsley. Enjoy!

This will create two extremely large plates of pasta, or you can easily serve four nice-sized servings with a large salad and be satisfied.

Ingredient List Vanilla Fudge

1/2 cup cashews finely ground
1 tablespoon water
2 tablespoons lucuma powder
1 tablespoon mesquite powder
3 tablespoons agave nectar
2 tablespoons melted cacao butter
2 caps vanilla essence or 1 vanilla pod

Chocolate

90g melted cacao butter (you will remove the 2 tbs for the fudge from this quantity)
3 tablespoons cacao powder
2 tablespoons mesquite
1 tablespoon lucuma
1 tablespoon agave nectar
1 cap vanilla essence or 1/2 vanilla pod

Instructions Method Melt the cacao butter in a bowl in the dehydrator or over a bowl of hot water Bain Marie style.Fudge: In a high speed blender (e.g. vitamix) or a coffee mill, grind the cashews to a powder, then remove 2 tbs of the melted cacao butter and add along with the other ingredients to make a fudge like paste.Chocolate: To the remaining melted cacao add all the ingredients and stir in quickly with a whisk, whilst keeping the bowl over the warm water. If the mixture is too dry just squirt in a little more agave.Assembly: Take some of the fudge and press down into the base of your desired mould, and then top with chocolate. Refrigerate until set. Enjoy!

Ingredient List Bread

1 cup tomatoes
1 tablespoon Italian seasoning
3 sun-dried tomato halves
15 basil leaves
1/2 teaspoon salt
1 tablespoon lemon juice
1 tablespoon agave nectar
1/2 cup pumpkin seed meal*
1/2 cup flax seed meal*

Sour creamed cashews

1 cup cashews
1/2 teaspoon salt
2 teaspoons lemon juice
1 teaspoon apple cider vinegar
3 teaspoons minced thyme/lemon thyme

Pepper sauces

2 red peppers
2 tablespoons olive oil
1 teaspoon salt

Instructions For the bread:

* Pumpkin seed and flax seeds meal is simply the seed turned into powder in a high speed blender or coffee grinder

Blend all ingredients in a high-speed blender until smooth

Spread 6 even 'rounds' on a dehydrator sheet, and dehydrate for a few hours until they can be removed from the sheet. Dehydrate for a further 6-8 hours, or overnight until fully dried.

For the sour creamed cashews:

Blend all ingredients, except the thyme, in a high speed blender until smooth

Add thyme and pulse until fully mixed in

For the pepper sauces:

Mix all ingredients in a bowl and dehydrate for 6-8 hours

Once removed from the dehydrator, place in a high-speed blender with 1 teaspoon olive oil, 3 teaspoons water and 1 teaspoon lemon juice, and blend until smooth. You may have to add more water depending on how dry your peppers got during dehydrating.

For the assembly:

Prepare 300g spinach by mixing in a large bowl with 2 teaspoons salt, and 2 tablespoon olive oil. Massage the spinach until it wilts and takes on a lightly cooked appearance.

Cut open 2 small avocados and, using a spoon, remove the flesh from each half in whole pieces. Cut each piece into a 'fan' by slicing them several times.

Assemble by starting with a napoleon cracker then adding a layer of spinach, one of the sliced avocado halves, and finally some of the creamed cashews. Repeat this for a second time and garnish with the pepper sauces. Serve with plenty of love and enjoy!
