“Blueberry Turtles” can be enjoyed with your choice of nut or seed milk, however they are just as delicious when eaten by themselves. They make great on-the-go snacks and are easy to take along anywhere.
A few tips...
The listed ingredients can amount to roughly two dozen or more turtles. These cookies are not meant to be overly sweet or hard but instead sweet-tart and chewy.
Overripe bananas do not work well for this recipe as their concentrated flavor overwhelms the other ingredients. Bananas that have just become ripe and have small brown spots throughout the surface of the peel are perfect. Bananas with peels covered in large brown spots or that are completely brown are too ripe for this recipe.
The full character of this cookie is best enjoyed when the middle is completely firm. As I mentioned earlier, the high moisture content of this recipe requires a lengthy drying time. If you make the cookies thicker than one centimeter, the dehydrating process will take much longer. If you have a dehydrator you can place it in there at 105 degrees F to accelerate the softening process.
Serve at room temperature or lightly warmed from your dehydrator. For added fun you can serve this over your favorite raw rice or zucchini noodles!

Bring 1 quart UNchlorinated water and 2T sea salt to a boil in a non-reactive pan. Remove from heat and let cool to room temp.

Add the dates and salt, and process until well mixed. It will form a sticky ball. (If it falls apart when you squeeze it, then you’ll need more dates.) Lightly oil your glass pie plate with coconut oil. Press the mixture from the center out to the sides. It will be about ¼” thick or more. Set in the refrigerator.
Coconut Cream:
Zap ingredients in your Vitamix on low for awhile. Scrape down the sides. Then zap on medium until super creamy. If you can get it to go on high this is ideal. The tricky part here is that coconut meat can be super-young and wet, or older and drier. So, you’ll have to do two things:
1) If it is too dry and won’t blend, then add some more agave or some coconut water. You want it thick and creamy, but it also has to blend.
2) You’ll have to taste test it to be sure that it is sweet enough, salty enough, enough vanilla, etc. Part of the reason for this is whether you use vanilla powder or liquid vanilla. Or if you use Sea Salt or other salt, etc.
Filling:
Cover the crust with ~1/3 of the cream. Place ~ 1 cup of blackberries into the cream. Pour the rest of the cream over the blackberries. Place the rest of the blackberries into the cream. Refrigerate ~2 hours before serving.
Note: It works best to hand-place each blackberry into the pie. This way the blackberries stand out from the cream and give a visual beauty to the Earth’s bounty! With a vegetable peeler, peel the zucchini and squash into long, thick strips. These will be the noodles. Set aside in a large bowl.
For the Rawfredo Sauce:
Place the Rawfredo ingredients in a food processor and blend until smooth and creamy. You might have to add a little more water if needed. Remove from the processor and place in the bowl with the noodles.
To Assemble:

They were very surprised when I told them that I don't sit around munching on carrots all day and so I decided to create a dish all on my own, no cookbooks or recipes, just based on my last year of raw experiences. And boy is it tasty! They loved it (and a couple of them were mushroom haters!)!
1. In medium to large container with a lid, combine mushrooms with other steak ingredients.
2. Add lid, shake to coat, and let marinade for at least one hour. The larger your pieces are, the longer it will need to marinade; whole pieces can take around 4 hours. You will know when the center looks like it has absorbed the juices at least 1/4 of the way in.
3. Using a Saladacco, a Vegetable Jullianer, Mandolin, or any similiar product, make zucchini into noodles and let sit at room temp. Sprinkle with salt, pepper, and TJ/ italian seasonings and mix. (Optional add 1t white truffle oil).
4. Dice 1 large heirloom tomato and set aside. Also set aside 1/2 of the onions, and 4 basil leaves
5. Combine all the sauce ingredients into food processor and blend well. Add saved sun-dried tomato and date water and blend until desired consistency.
To Assemble:
6. In large serving platter add Zucchini Pasta, sprinkle with rest of onions and basil leaves. Add 1/2 of diced heirloom tomatoes to center of pasta. Add mushrooms to the center on top of tomatoes. Sprinkle remaining heirlooms over everything. Drizzle with tomato sauce and sprinkle with fresh ground pepper. Serve with remaining tomato sauce on the side (I put mine in a small pitcher) to add to individual plates, and ENJOY!!!!

3. Sprinkle with Spices you like, top with powdered pine nuts if you like for a parmasean look if desired.
4. Place Mushrooms on dehydrator screen and dehydrate 2-4+ hours until mushrooms are soft. ALFREDO SAUCE

1 cup raw cashews
1/3 cup pine nuts

1/16 teaspoon cayenne pepper, ground
GARNISH
1/3 cup finely chopped parsley

Sprinkle the pasta with some salt and massage it into the beets. Let the pasta sit in a colander while you create the sauce. It will become softer, like an al dente pasta.
In a food processor, mix together all sauce ingredients. Place pasta onto individual serving plates, top with sauce and parsley. Enjoy!
This will create two extremely large plates of pasta, or you can easily serve four nice-sized servings with a large salad and be satisfied.

* Pumpkin seed and flax seeds meal is simply the seed turned into powder in a high speed blender or coffee grinder
Blend all ingredients in a high-speed blender until smooth
Spread 6 even 'rounds' on a dehydrator sheet, and dehydrate for a few hours until they can be removed from the sheet. Dehydrate for a further 6-8 hours, or overnight until fully dried.
For the sour creamed cashews:
Blend all ingredients, except the thyme, in a high speed blender until smooth
Add thyme and pulse until fully mixed in
For the pepper sauces:
Mix all ingredients in a bowl and dehydrate for 6-8 hours
Once removed from the dehydrator, place in a high-speed blender with 1 teaspoon olive oil, 3 teaspoons water and 1 teaspoon lemon juice, and blend until smooth. You may have to add more water depending on how dry your peppers got during dehydrating.
For the assembly:
Prepare 300g spinach by mixing in a large bowl with 2 teaspoons salt, and 2 tablespoon olive oil. Massage the spinach until it wilts and takes on a lightly cooked appearance.
Cut open 2 small avocados and, using a spoon, remove the flesh from each half in whole pieces. Cut each piece into a 'fan' by slicing them several times.
Assemble by starting with a napoleon cracker then adding a layer of spinach, one of the sliced avocado halves, and finally some of the creamed cashews. Repeat this for a second time and garnish with the pepper sauces.
